In addition, I take this opportunity that is offered to me to speak to the many customers who have done us the honor of coming to the Pigeonnier and to remind anyone who wants to hear it: I am still the owner of this establishment since its creation and opening to the public in September 2007.
For those who would also wonder about my desire to have wanted to make live or survive Le Pigeonnier, I will answer quite simply and naturally, it is a real Passion! Under no circumstances will I be able to pretend or even cheat with you, dear customers! Much more than facts, they are acts! I have boundless admiration for this fabulous estate! For those who would think that I have no knowledge in catering, I humbly wish to point out that I had the happiness and the privilege of frequenting the greatest tables in France and of meeting the best starred chefs such as Marc Veyrat who did me the honor during my presence in his establishment in ANNECY at the time to give me his emblematic hat (exhibited precisely in the room of the Pigeonnier)!
Finally, the obligatory welcome on the terrace will certainly not allow us initially to offer you as wide a variety of dishes as we would like. In addition, I fear the reception of our customers for dinners, given the schedule that will be authorized and / or imposed on us and also because of the risks inherent in the freshness of the evening which could well be a substantial criterion, nature to have more reservation at noon.
